What would Shavuot be without a kugel? This one is a bit unusual with the
addition of dried apricots and apricot juice.
Makes 15-20 squares
8 oz. medium noodles, cooked, drained
1/4 cup margarine, melted
1/3 cup sugar
3/4 cup dried apricots, cut up
3 eggs, beaten
1 cup milk
1 cup apricot juice
1 tsp. vanilla
topping:
1 cup crushed corn flakes
1/4 cup brown sugar
1 tsp. cinnamon
2 Tbs. margarine
Combine noodles with remaining kugel ingredients and pour into greased
baking dish. Combine topping ingredients (except margarine) and sprinkle
evenly over noodles. Scatter small bits of margarine over topping and bake
in 350-degree oven for an hour.
