1 Recipe quiche dough for a 9 to 10" quiche pan
3 eggs
3 shallots, chopped
2 tbs butter or margarine
8 ounces Brie
4 ounces milk
4 ounces cream
3 ounces asparagus spears, blanched 3 minutes
in salted water
salt, pepper, mustard powder
Roll out dough and place in a quiche pan
Pre heat oven to 400 F
Melt the butter and cook the shallots 1 minute
Remove crust from Brie and cube it. Place in a bowl with the milk, eggs,
cream and seasonings and beat well to combine
Spread the shallots on the crust, pour the cheese mixture on top and
decorate with the asparagus. Bake 30 minutes.
