What a coincidence! I just got the recipe while I was in India. While I
was in Agra, I ran across a restaurant called Saeed's that served
Israeli food. Saeed had been to Israel and liked a lot of the food that
he had there, so he spent some time learning how to make it and now he
has a little niche for himself in Agra. If you're ever in Agra, stop
into his restaurant in Taj Ganj (the area of the city near the Taj
Mahal).

Like all many cooks (and Saeed *is* a good cook), Saeed doesn't bother
measuring ingredients when he cooks, so you will just have to experiment
with the quantities.

Matbouchah

Red onions
Green chilli peppers
Garlic
Tomatoes
Salt
Red chilli powder
Water

Fry the onions, garlic and chilli peppers in a bit of good oil. Add the
rest of the ingredients and cook slowly until you have a thick paste.
