Hummus #8 - pareve

If you are using dried chick peas, you must soak them overnight in
water. The next morning rinse and boil in salted water till soft - this
takes a long time so it is much quicker to use a pressure cooker if you
have one. You can use as much chick peas as you think you need. I have
also frozen cooked chick peas & the ready made product,so more is
better. After you have cooked the chick peas it is a good idea to
remove all the skins. They should come off easily, but it is a little
time consuming. If you can find canned chick peas then all you have to
do is strain them and continue as below.
Process the chick peas (reserve a few chick peas for decorating the
final dish) in a food processor and add garlic, olive oil, cumin, and a
little techina if you have some,and process till desired consistency,if
the mixture seems a little dry add some water.As to the amounts of
garlic etc. it all depends on how you like the flavor.
Serve on a flat plate decorated with paprika and a some olive oil and
of course pita bread.
