Hummus #3 (smaller version) - pareve

Posted by : Maxine Wolfson

I've been making a similar one [to Mimi's] for lunchtime sandwiches.
It makes about a pint, and is amenable to a wide variety of additions.
This is the version I made tonight:

*1 lemon, juice and zest only
*2 cloves garlic, chopped
*2 or 3 whole green onions/scallions, chopped
*1/2 cup chopped parsley
*1/8 to 1/3 cup tahini
*1 tsp freshly ground cumin
*1 tsp salt

Place the above ingredients in a food processor or blender, and mix
until they are a smooth green paste. Add

*15 ounces cooked chick peas/garbanzo beans/ceces
        well rinsed.

Continue processing until smooth. Add

*good quality olive oil or cold water

until the hummous is smooth, about 1-3 Tablespoons, depending on your
preference. Serve it on pumpernickel with lettuce and tomato. For an
extra kick (this version is pretty mild), add sliced onions.
