Cracked Wheat and Chickpea Salad - pareve

This salad is similar to "tabbouleh," versions of which
appear throughout the Middle East.
Serves 4
Ingredients
1 1/2 cups bulgar wheat
1 1/2 cups warm water
1 cup cooked chickpeas, coarsely chopped
1 cup finely chopped green onion
1/2 European (hydropontic) cucumber, seeded and diced
5 plum tomatoes, seeded and diced
1/2 cup chopped fresh parsley
1/4 cup finely chopped fresh mint
1/2-3/4 cup fruity olive oil
2 tablespoons wine vinegar
2 tablespoons lemon juice
additional lemon juice, if desired
salt and freshly ground black pepper
Rinse bulgar well and mix with water. Let stand till water
is absorbed. Drain and press out excess moisture.
Mix with remaining ingredients. Season to taste. (Salad
should be fairly tart).
Cover and chill. Serve at room temperature or somewhat
chilled.
