Cabbage Salad - pareve

Most people think of coleslaw being prepared with mayonnaise,
but the original Ashkenazi recipe was probably closer to 
this version dressed in just oil and vinegar.

1/2 head of red cabbage, sliced
1 medium onion, minced
1/3 c cup oil
1/3 cup vinegar
1 tbsp sugar or sweetener
salt, pepper to taste

Mix the oil, vinegar, sugar, salt and pepper for the 
dressing. Pour over the cabbage and onion. Mix 
thoroughly and leave in a cool place for at least 1 hour.
