2 avocado, peeled and sliced
1/4 cup lemon juice
2 large pink grapefruit, sectioned
3 oranges, peeled and sectioned
Favorite assortment of salad greens
Garnish: chopped dates
Dressing (recipe follows)
Grate the zest from one of the oranges, taking care to shave off the
colored part of the peel only. Set orange zest aside.
Toss avocado slices with lemon juice. Mound lettuce on individual
plates. Arrange grapefruit and orange sections on leaf lettuce. Drizzle
dressing over salad and garnish with chopped dates.
Dressing:
1 (8 oz) carton) sour cream
8 pitted dates
grated rind of 1 orange
1 tablespoon fresh orange juice
1/4 teaspoon salt
Process all ingredients until smooth.
