Hamantaschen with Three Fillings #2 - pareve

Purim has always been a mystery to me since all these holidays
were not explained to me and have been for other families that
were religious. I researched this and this is what I found
which I would like to share with all those interested.
Feast of Lots
Sometimes called the Feast of Esther. Purim joyously celebrates
the downfall of the tyrant, Haman, through the efforts of
Mordecai and his niece, Queen Esther. A very happy festival,
Purim is the occasion of present-giving, plays, and dressing-
up for children, games and great merry-making. The waving of
the noisy Purim gregars (rattles) is traditional and at the
festival meal the foods would include the Purim Kalisch
(decorated sweet plaited loaf) taking place of honor at the
festive meal , and Hamantaschen, triangular pastries filled
with poppy seeds, and bobs (brown beans).
I have made all of the above recipes. It tastes like my
Grandmother's baking. Unfortunately, these recipes were
found from an old cookbook in the archive section of a
library. My Grandmother's recipes were in her head and not
written down. I urge everyone to write or perhaps make a
disk of family favorites that your younger generations will
enjoy.

Hamantaschen
5 oz. (5/8 cup non-dairy margarine
5 oz. (5/8 cup) sugar
1 egg
4 oz. ( 1 cup) all-purpose flour
melted honey to glaze
Cream together the margarine and sugar until soft. Add the
yolk of egg and the flour slowly to make a stiff dough, using
some egg white if dry. Knead lightly. Roll out thinly, and
cut into 3 inch rounds. Place the filling in the center of
each round. Brush the edges with water and bring the edges
to the center to form triangles. Bake in the oven at 425
degrees for 20 minutes. Brush with melted honey.
Filling
4 oz. (1/3 cup) poppy seeds ground
grated lemon rind
1/4 pint (1/2 cup plus 2 Tablespoons) water
2 oz. (1/4 cup sugar) 1 oz. (2 Tablespoons) margarine
1 oz. (1/4 cup ) sultanas
a little wine if liked
Simmer the poppy seeds in water with the other ingredients.
Use when cool. The hamantaschen can be spread with glace'
icing, also.
Alternative Fillings
4 oz. (1 cup) sultanas
4 oz. (1 cup) raisins
2 oz. (1/2 cup) currants
2 oz. (1/4 cup) sugar
1 teaspoon cinnamon
1 cooked apple, peeled and cored
juice and rind of 1 lemon
Mince (grind) all the ingredients together and mix well.
Prune filling
8 oz. (1 1/3 cups) prunes
rind of 1 lemon and 1 orange
2 oz. (5/16 cup) brown sugar or to taste
Soak the prunes overnight with the rinds and sugar and
sufficient water to cover. Cook gently until the liquid has
evaporated. Remove the rinds and stones and chop finely or
mince (grind).
Note: drained, canned prunes may be used, mixed with finely
grated lemon or orange rind
