Turkey Cutlets with Mushrooms

I made this the other night for a pot luck at our Temple and
it was very well received. I have done this with chicken
also and it is very good.

Turkey Cutlets with Mushrooms
2-4 Tb olive oil
1 pound mushrooms, sliced
4 slices turkey breast, about 3 oz each
Flour
1/4 cup dry white wine or sherry
3/4 can chicken broth
1/4 or less cup lemon juice
2 Tb capers, optional
Saute mushrooms in 1 Tb oil until tender and remove to a
warm platter. Dust the turkey with flour and saute in
remaining oil for 3-4 min turning whien the edges are
opaque. Remove to platter with mushrooms. stir and
additional teas of flour into skillet. Stir in sherry or
wine, then broth and lemon juice. Simmer 5 min. Add
mushrooms and turkey (capers if used) to sauce. Season as
needed with salt and pepper. Heat through. Garnish with
lemon slices. Serves 4
