Chicken Livers, Sweet 'n' Sour - meat

The following is a recipe we like made with chicken livers. My husband also
sautes chicken livers in chicken broth and puts them in spaghetti sauce.
SWEET N' SOUR CHICKEN LIVERS (meat)
makes 6 servings
SOURCE: An old Weight Watcher's cookbook
3 tsp. Chinese sesame oil or other oil
2.5 lb. chicken livers (kashered)
3/4 cup green pepper
3/4 cup thinly sliced green onion
1-1/2 cups canned pineapple chunks (no sugar added)
3 Tbsp. rice (or wine) vinegar
3 Tbsp. teriyaki sauce
4-1/2 tsp. brown sugar or substitute
1. In skillet heat oil over medium heat. Increase heat to high and add
livers, pepper, and scallions and cook, stirring constantly until livers are
browned.
2. Add pineapple with juice, vinegar, teriyaki sauce and sugar; continue
cooking and stirring over medium head until warmed through.
3. Serve hot; over rice or potatoes, if desired.
Weight watchers equivalents (without rice or potatoes): 1/2 fat, 6 oz. liver,
3/8 c. vegetable, 1/2 fruit, 6 opt. calories
