Chicken Curry, Slow Cooker - meat
Posted by : Linda Olson
Use deboned/skinned chicken breasts--4-5 if using the frozen
variety, about 3 lbs. if using fresh. Cut into small strips or cube and
toss in plastic bag with 1/2 cup flour and salt to taste. Saute in small
amount of oil. Drain oil and add to slow cooker with the following: 1
med to large chopped onion, 1 1/2 tablespoon curry powder, 1 large can
of apple sauce , 1 chopped green pepper, 1-2 small hand fulls of raisins
and 1 can of condensed chicken broth. Stir well, cook on medium for
8-10 hrs. If your cooker is too hot, the sugar in the applesauce will
burn--make sure you stir about 1x per hour. serve over rice and garnish
with pineapple chunks, peanuts or hot salsa if desired.
