Stuffed Derma/Kishke - meat

I have never made this...I do a falsa (fake sort), but it does give you
the method.

  STUFFED DERMA (STUFFED KISHKE)
                                                           (Passover)
        Yield: 8 servings

    36"         Kosher beef Sausage casing;
    1 c         Sifted flour
    1/2 c       Matzo meal
    1/4 c       Onion; grated
    1 1/2 ts    Salt
    1/4 ts      Black pepper
    1 ts        Paprika
    1 c         Chicken fat; (schmaltz)
    2 x         Onions; sliced

  Rinse the inside and outside of the casing. Cut the
  casing in half. Tie up one end of each half.

  Mix the flour, matzo meal, grated onion, salt, pepper,
  paprika and 3/4 cup of the chicken fat (schmaltz) in a
  large bowl. Stuff the casings with the mixture and tie
  up the open ends. Cook the kishke on a large sauce of
  boiling water for 1 hour. Drain well.

  Preheat oven to 350 degrees F.

  Spread the remaining fat in a baking dish. Arrange the
  onion slices in the dish. Place the kishke in the dish
  and bake for 1 1/2 hr. basting frequently with the pan
  drippings.
