Side: Vegetable Cutlets - dairy

2 eggs, beaten
1 cup mushrooms, diced
1/2 cup celery, finely diced
1-1/4 cups carrot, grated
3/4 cup onions, finely diced
1 teaspoon frozen apple juice concentrate
1/4 teaspoon pepper
1 teaspoon nutmeg
1 Tablespoon ketchup
1/2 cup cottage cheese
3 Tablespoons mashed potato

Combine beaten eggs with remaining ingredients.
Shape into patties and fry or bake in greased pan till 
browned on both sides.
