Side: Potato Muffins - pareve

3 medium potatoes, cooked and mashed
1 teaspoon salt
3 eggs
1 Tablespoon shortening

Combine potatoes and salt in mixing bowl.
Add eggs, one at a time, and beat till smooth.
Add shortening and continue beating till very light and fluffy.
Fill greased muffin tins about half full.
Bake in moderate oven till light brown.
