Side: Matzah Egg Foo Young - dairy, pareve

1/4 cup mushrooms, sliced
1 onion, chopped
1/2 cup chopped celery
2 carrots, grated
1 package frozen chopped spinach
3 eggs
3/4 cup matzo meal
1 tsp. salt
1 dash pepper
2 tbsp. butter or margarine
Oil for frying

Cook and drain spinach according to package
directions. In a frying pan, sauté mushrooms,
onion, celery, and carrots in margarine until
soft (5 - 8 minutes). Cool. Add spinach,
eggs, matzo meal, salt and pepper, and mix
well. Refrigerate 15 minutes. Form into
pancakes and fry in hot oil until brown on
both sides. Serves 3 - 4.
