Side: Latkes, Leftover Meat - meat

Yield - 4 - 6 servings

INGREDIENTS:

2 cups mashed Potatoes
1/4 cup matzo cake meal
2 eggs beaten
salt and pepper to taste
1 cup ground leftover meat
schmaltz (Oil) for frying

METHOD:

Combine first 4 ingredients and shape into  1 1/2 inch balls.  Scoop a hole
in the centre of each ball and fill with ground meat.  Press the potato
mixture over the opening and flatten the balls slightly.  Fry in a generous
amount of hot fat (Oil) until lightly browned.  Drain on Paper towels.
