Side: Knishelach (Little Knishes) - meat

      Yield: 12 Servings

      1 md Onion; diced
      3 tb Chicken fat; or parve marg
      1/2 lb Liver; broiled and ground
      3 c  Potatoes; (5 large) mashed
      2    Eggs; slightly beaten
      2 tb Chicken fat; or parve marg.
      1 ts Salt
      1/8 ts Pepper
      6 tb Matzo meal
      1    Egg yolk; beaten with
      1 tb -water
 
  Sauté onion in the 3 TBSP fat. Combine with ground
  liver and season to taste. Combine mashed potatoes
  with eggs; the 2 TBSP of fat, salt, pepper and matzo
  meal. Form into walnut-sized balls. Make a depression
  in the center of each and fill with liver mixture.
  Brush with diluted egg yolk. Place on a well-greased
  baking sheet and bake in a hot oven (400 deg) 20
  minutes or until well browned. Makes approx. 3 1/2 doz.
