Fritada di Cauliflor
Typical Sephardi dish for Pessah.
Ingredients :
2 small cauliflowers
1-2 cups matzah meal
3-4 beaten eggs
Salt and pepper
oil for frying
Cook the cauliflower until soft in salted water.
Drain and mash in a food processor.
Add the eggs and the matzeh meal, salt and pepper
Form oval patties with wet hands and cook on both sides until brown.
