Blintzes/Crepes - pareve

Not a cookie, but certainly something to use as a base instead of
matzah.  My sister found this recipe but I'm not sure from where.

Passover Blintzes/Crepes

3 large eggs
1/4 tsp. salt

Beat together

1 cup Potato Starch - add to the above
2 cups water - add to the above and beat well.

Pour a ladle full of these onto a heated and slightly greased frying
pan (or ungreased non-stick pan) and swirl around the pan so that the
whole bottom is covered.  Cook until dry, then turn carefully and cook
another 30 seconds.  

Most important! - Mix the batter well *before* EACH time you pour more
into the pan, or the mixture will separate.

We used these for making 'sandwitches' during Pesach to take to work,
since Matzah tends to get soggy or break into thousands of crumbs.
