I have a good recipe here - if you can get the ingredients
KLP, it would probably be a nice change of pace from the
heavy meat portion of the dinner. It's adapted a bit for
the holiday - I give 1 tsp salt instead of 1/2 tsp salt and
1 tbsp soy. I'd guess that soy, being a fermented product
usually made with wheat as well, isn't applicable - the
reduced poaching liquid helps fill out the flavor as a
replacement. Also, the vinegar has been replaced with
lemon juice.
Sweet-Sour Chicken With Pineapple
1 lb poached chicken breasts or thigh meat, chunked (reduce
poaching liquid to about 1/2 cup and save)
1/4 c. brown sugar
2 tbst potato starch
1 tsp salt
1/4 c. lemon juice
1/2 tsp ground ginger
1 #1 can pineapple chunks, packed in juice, drained and
juice reserved
1 green pepper, cut in chunks
1 medium onion (a sweet one works best) cut in chunks
In a saucepan, mix brown sugar, starch, and salt. Add lemon
juice, ginger, pineapple juice and reduced poaching liquid.
Cook this mixture until slightly thick, stirring constantly.
Add pepper, onion, and pineapple chunks and cook 2 or 3
minutes. Just before serving, stir in the chicken and cook
until chicken is warm, about 2 or 3 minutes. Serve.
