Noodles - pareve

A wonderful alternative to Matzoh Balls during Pesach, you can also use them
in place of regular noodles - in soup; with meatballs; with vegetables or in
a kugel.

      4 eggs
      1/8 tsp salt
      1/4 cup (60 grams) Matzo Meal
      1/2 cup (120 grams) potato flour
      2 T. fat

Beat the eggs and salt lightly. Blend in the Matzo Meal and potato flour.

Melt a little of the fat in a medium frying pan. Add about half the mixture
and cook until firm. Turn over and cook through. Roll the cooked round
noodle patty up and cut in thin strips. Repeat with the remaining mixture.

As a variation, add a tsp. of chopped dried dill to the mixture prior to
cooking.
