Matzah Balls/Kneidlach: Foolproof (2) - pareve

Posted by : Joan Ross

There are many recipes for all kinds of matzoh balls. here is only one
of the "fool proof" recipes easily prepared.

1 cup matzah meal
1/2 cup club soda
1/2 cup melted margarine
4 eggs, fork beaten
1 tsp. salt
dash pepper

Combine meal, salt and pepper. Beat in eggs and melted margarine.Stir
in club soda. Cover and chill 1 hour. Form into balls ( ping pong size
) with wet hands and cook gently inn boiling soup, covered about 25 to
30 minutes. Balls will triple in volume. Do not lift cover until end
of cooking time. These should come out fluffy and light as a feather.

Another version of the above , slightly different prepared the same
way as above is:

Foolprood Matzah Balls # 2
4 lg eggs
1/2 cup water
1/3 cup melted shortening
1 cup matzah meal
1 tsp salt
1/8 tsp pepper
pinch nutmeg
