Haroset, Rambam's - pareve

(about 1 cup)
This is taken from the recipe given by Moses Maimonides.

1 cup pitted dated, chopped dried figs, or raisins
2 cups water
1/4 cup wine vinegar
2 tablespoons fresh or 1 tablespoon dried hyssop leaves 
(not ground) 

1. Pour water over fruit and let soak overnight.
2. Bring to a boil, reduce heat to medium-low, and cook, stirring
frequently, until mixture forms a paste-like consistency. Cool.
3. Stir in hyssop and vinegar.
