Side: Spinach Souffle' - dairy

1-1/2 lbs. cottage cheese
6 eggs
250 grams/9 ounces yellow cheese, cut into chunks
50 grams/1.8 oz. butter, cut into small pieces
1 package frozen spinach, thawed
50 grams/1.8 oz. [2 Tbsp] matza meal
Combine all ingredients except matza meal and mix well.
Pour into greased casserole or souffle' dish.
Sprinkle matza meal over top.
Bake for one hour at 350 F.
Let stand to partially cool before serving.
