Lunch/Dinner: Matzah-Tuna Bake - dairy

 Serves 4

 3 dry matzahs (use hands to break into fourths)
 3 Tbs. margarine, softened
 2 cups tuna, rinsed and drained
 1/2 small onion, chopped
 2 Tbs. mayonnaise
 1 tsp. lemon juice
 salt, pepper to taste
 2 cups shredded mozzarella
 2 tomatoes, thinly sliced
 1/4 cup grated parmesan cheese.

Grease a 9-by-13-inch cookie sheet; set aside. Coat both sides of matzah
with softened margarine, place on cookie sheet; set aside. In bowl, combine
remaining ingredients; mix well. Spread mixture evenly over coated matzah.
Top with mozzarella, tomato slices and parmesan. Bake in 450-degree oven 15
minutes. Cool.
