Lunch/Dinner: Matzah-Chicken Roll-Ups - meat

 The matzah chicken roll-ups are a wonderful way to utilize leftover chicken
 from the seders. The extra-tasty filling makes these delicious; add a salad
 for a complete meal.

 MATZAH CHICKEN ROLL-UPS

 Makes 1 dozen

 1 large onion, chopped
 2 cloves garlic, crushed
 2 Tbs. oil
 1/2 cup sliced mushrooms
 1/3 cup chopped parsley
 2 cups cooked ground chicken
 cumin, turmeric to taste (optional)
 salt, pepper to taste
 3 eggs
 3 Tbs. matzah meal
 6 matzot sprinkled with water, wrapped in towels for 10 minutes

Sauté onion and garlic in oil until soft. Add mushrooms and parsley and cook
5 minutes. Add chicken and seasonings and cook additional 10 minutes. Remove
from heat and add 2 eggs and matzah meal. Cut each matzah in half; near
narrow edge put a Tbs. of chicken mixture and roll up matzah carefully. Dip
each in remaining egg and fry in hot oil or margarine until lightly brown on
both sides. Drain on paper towels.
