Kugel: Vegetable Farfel - pareve

Veggie Farfel Koogle

This is a very forgiving recipe, you can add just about any
vegetable to it, and any seasoning that you like.
2 Cups Farfel
6 Eggs
1 Cup Chopped Mushrooms
1/2 Cup Chopped Onions
1/2 Cup Coarsely Chopped Carrots
1/2 Cup Finely Chopped Celery
1 Cup Chopped Zucchini
1 to 2 tsp salt
Pepper to taste
Garlic to taste
1. Soak farfel until soft, squeeze out water
2. Mix farfel with remaining ingredients
*Note, I find it best if I saute the veggies before mixing
with farfel.
3. Put in greased baking pan (9x13)
4. Bake at 325 for about an hour.
