SWEET POTATO KUGEL

(From No Cholesterol Passover Recipes, by Debra Wasserman)
6 small sweet potatoes, peeled and grated
3 apples, peeled and grated
1 cup raisins
1 cup matzo meal
2 tsp cinnamon
1 cup fruit juice or water
Preheat oven to 375 degrees. Mix ingredients together. Press into large baking
dish. Bake 45 minutes at 375 degrees until crisp on top. Serves 12.
