1/2 pound prunes
1/4 cup sugar
1 cup water
6 sweet potatoes
1/4 cup sugar
1/2 cup matzo meal
3 eggs or 5 whites
Cook prunes with 1/4 cup sugar and water till soft. Drain.
Cook potatoes in their skins in salted water. Drain, peel and mash.
Add 1/4 cup sugar, matzo meal, eggs and margarine. Heat greased tube pan.
Put half the potato mixture on the bottom. Cover with prunes, then
remaining poratoes. Bake at 350F till golden brown. Invert on platter.
