Kugel: Spinach - pareve

SPINACH BAKE
Heat oven to 325 -- Prepare 9 x 13 pan -- grease well.
2 Onions chopped
1 lb Mushrooms coarsely chopped
8 carrots coarsely chopped
1 zuchinni coarsley chopped
40 oz fresh spinached chopped
1 Cup Matzah Meal
6 to 9 eggs (you decide the consistancy you'd like best)
salt
2 Telma chicken boullion cubes (or you can use veggie or
onion)
Saute onions, carrots, zuchinni and mushrooms in 2 T oil for
a few minutes until they just start to get a little soft.
Combine all ingredients together in a big bowl. Mix
thoroughly (hands work best!)
Put into prepared pan. Bake 45 mins to 1 hour. Should be
firm and set. This also freezes really well.
***I think it would also work well if you wanted to add some
grated cheese. I think Montery Jack, Swiss or Mild Chedder
would work best.
