Kugel: Spinach-Matzah - dairy

easy and tasty

2 10 oz. boxes of frozen chopped spinach thawed and drained
1/2 lb creamed cottage cheese
4 eggs
salt and pepper
3 whole matzoh (or more)

Wet matzoh with water or vegertable broth to soften but not make
mushy.. Mix spinach, eggs and cheese. Season to taste.
In a square pan layer a whole matzoh, some filling, another matzoh
etc.
Cover with foil and bake 350F for 35 minutes or hot.Double as needed.
Note: you can adjust recipe as desired. That is if you want to add
chopped onion  etc. or other spices you can
