Kugel, Matzo Farfel and Apple - pareve

MATZO FARFEL AND APPLE KUGEL

"The Passover Table"

5 tablespoons vegetable oil or melted and cooled margarine
2 cups matzo farfel
4 eggs
1 teaspoon salt
1 teaspoon sugar
1/2 cup water
2 apples, pared, cored and sliced
1 teaspoon lemon juice
1/2 teaspoon grated lemon peel
1/4 cup ground walnuts

Heat oven to 350 degrees. With some of oil or margarine, 
lightly grease 1-quart baking dish.

Combine farfel with 2 eggs. Place mixture in heavy skillet 
over low heat and toast farfel. Stir constantly until farfel
is golden and pieces are separate.

Beat remaining 2 eggs with salt, sugar and 3 tablespoons 
vegetable oil or margarine. Add farfel and 1/2 cup water.

Line bottom of prepared dish with half of apple slices and 
sprinkle with lemon juice and lemon peel.

Add farfel and remaining apple slices. Pour over remaining 
oil or margarine; sprinkle with nuts. Bake in preheated oven 
for 25-35 min.

Makes 6-8 servings.
