Kugel, Matzah - dairy, pareve

Matza Kugel

Grace Moshe, Ramat Hasharon
from "Taste of Passover," published by the Jerusalem Post.

3 matzot
3 eggs, separated
3 Tablespoons butter or margarine, softened
2 apples, finely sliced
1/3 cup sugar
pinch of salt
1/4 teaspoon cinnamon
1/4 cup walnuts, chopped
1 Tablespoon grated orange rind

Soak matzot in cold water; drain.
Combine matzot with egg yolks and butter/margarine and beat 
till smooth.
Add apples and remaining ingredients.
Beat egg whites till stiff and fold into matza mixture.
Pour into a greased dish. Dot with additional butter/margarine 
and sprinkle with additional cinnamon and sugar.
Bake in moderate oven for about one hour, or till light brown.
