Kugel: Matzah-Zucchini - pareve

Finally our local newspaper(Winnipeg Free Press) did an
article on Passover and this recipe sounds wonderful.

My Baba's matzah zucchini kugel
1 medium sized zucchini, shredded with peel
1 cup finely chopped green pepper
1 cup finely chopped celery
1 large clove garlic, finely chopped
1/4 cup diced green onion
1/2 pound diced mushrooms
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup melted margarine or oil
4 eggs
1 cup matzo meal
Combine all ingredients except eggs and matzo meal in large
bowl. Beat 4 eggs. Add eggs to mixture alternately with
matzo meal. Combine well. Place in lightly greased large
pyrex pie plate. Bake at 375 for 1 hour.
