Lemon Love Notes

1 Cup margarine (or butter if you wish it to be dairy)
1 Cup sugar
3 Eggs
2 Cups less 2 Tablespoon cake meal
2 Tablespoons Potato Starch
1/4 tsp salt
Juice and peel of 1 medium lemon
Beat butter and sugar in bowl for about 5 minutes until very
smooth and creamy. Add eggs, beat 5 additional minutes. Sift
cake meal, potato starch and salt together. Add to batter.
Mix in lemon peel and juice.
Wet hands and press cookie dough into a 9 inch square pan.
Bake at 350 degrees for 10 minutes and remove from oven.
While the crust is baking combine:
4 eggs
2 Cups sugar
2 Tablespoons Potato starch
Juice from 2 medium lemons
Pour over baked crust. Return to oven for about 30 minutes.
Cool, top with KLP powdered sugar and cut into squares.
**NOTE: If you cannot get KLP powdered sugar make your own!
Replace 1/2 Tablespoon from 1 Cup sugar with 1/2 Tablespoon
potato starch and process in food processor until very fine.
