Double Chocolate Chip Cookies 

If you prefer, you may substitute raisins for the chocolate and add chopped
nuts. If you are not serving these for a Seder supper, I would strongly
suggest you use butter. 

1 cup unsalted butter (or unsalted Passover margarine)
2 tablespoons (additional) unsalted Passover margarine
1 1/2 cups brown sugar
2 tablespoons honey
2 tablespoons Passover vanilla sugar
1/4 teaspoon salt
2 eggs - room temperature
1 1/2 cups cake meal
 1/4 cup matzoh meal
2 1/2 cups semi-sweet chocolate chips

Preheat oven to 350 F. Line two baking sheets with parchment paper or
lightly grease. Cream the butter or margarine with brown sugar, honey,
vanilla sugar and salt. Add eggs and blend very well. Fold in cake and
matzoh meal. Stir in chocolate chips. 

Drop large tablespoons of dough on baking sheet. Press down well with the
back of a wet spoon to flatten. Bake until slightly golden, 12-15 minutes.
These cookies are fragile just after baking but will firm up. Cool well or
chill in fridge for easier handling. 

Four dozen - approximately.
