Chocolate Chip-Cinnamon Cupcakes

Yield: 16 cupcakes
From "A Taste of Passover," a cookbook of recipes from
readers published by the Jerusalem Post.
Ingredients:
6 eggs, separated
3/4 cup matza meal
1/4 cup potato starch
1/4 cup water
1-1/3 cups sugar
1/2 teaspoon lemon juice
cinnamon and sugar to taste
1 cup pareve semi-sweet chocolate chips
Method:
Beat egg yolks, sugar and lemon juice till creamy. Add matza
meal and potato starch and mix well.
Beat egg whites till stiff and fold into batter.
Mix in chocolate chips and pour into paper-lined cupcake tins.
Top with cinnamon and sugar.
Bake in medium oven for 20 to 25 minutes.
