Cookies: Chocolate Chip Meringues - pareve

   1      cup           chocolate chips
   1      teaspoon      salt
   4                    Whites of 4 large eggs
   1      cup           sugar
   1      teaspoon      vanilla extract

Preheat oven to 300 degrees. Line 2 baking sheets with parchment paper.
Set the racks in the oven so as to divide it into thirds.

Partially grind chocolate chips in a food processor until they consist of
smaller chips and ground chocolate.

In a large bowl, sprinkle salt over egg whites and, using an electric
mixer, beat on medium speed for 1 minute. Change to high speed and
continue beating until soft peaks form. Continue beating and gradually add
the sugar. Once all the sugar has been incorporated, add the vanilla and
continue beating. Eggs should be smooth, stiff, and satiny white. Stir in
semi-chopped chocolate chips.

You can drop the batter on the prepared baking sheets using a teaspoon,
but the easiest way to form meringues is using a pastry bag and piping
them. Squeeze the batter out into kiss-shaped rounds 1 inch to 1 1/2
inches across. Allow 1/2 to 1 inch between cookies.

Bake 2 sheets at a time at 300 degrees for 20 to 25 minutes, until cookies
are firm. They will continue to firm up as they cool. Let cool on the
baking sheets for at least 10 minutes. Store in an airtight container.
Makes about 6 dozen.
