Cookies: Almond Macaroons - pareve

*Does anyone have any cookie/biscuit recipes using mainly potato starch (or
*potato flour). My son is wheat intolerent so I need to make some "munchies"
*that he can enjoy. I would appreciate it very much. You can email me

Most passover recipes can be made with just potato flour.  
Substitute equally for matzo cake meal.  

These are not potato flour, but they are wheat-free<g>.  I just 
made a batch yesterday.

Almond Macaroons

4 egg yolks
1 cup sugar
2 cups ground almonds

beat egg yolks until they become pale yellow.  Add sugar, and 
mix until smooth.  Add ground almonds.  Unless you have a very 
powerful mixer, do this last by hand; the batter becomes very 
thick.

drop on greased cookie sheet by the teaspoon-full (about the 
size of a walnut).  Bake 10-15 minutes at 350^F until golden 
brown.  Allow to cool before removing from pan.

makes about 30-40 cookies.
Recipe doubles well.
