Candy: Honey Balls #1 - pareve

My Great Aunt Chile used to make candy with Matzo farfel, honey, walnuts and
ginger. This was just one of the many special delicacies that she prepared
with tender loving care. I don't have her recipe as she cooked from a recipe
that called for a little bit of this and a little bit of that. I did,
however, find a recipe that seems to be similar from The Complete Passover
Cookbook by Frances R. AvRutick. The recipe goes as follows:
Honey Balls
1/2 cup honey
1/3 Cup Sugar
1 1/4 Cups chopped walnuts
1/4 Cup matzo farfel
2 teaspoons grated orange or lemon rind
In a medium-sized saucepan over low heat, heat the honey and sugar to
boiling. Stir constantly. Add the nuts and the farfel; stir until the
mixture is thick. Add the grated rind. Remove from the heat. Drop by the
teaspoonful onto a wet cookie sheet or wax paper, forming small balls. Cool.
Yields 18 to 24 balls.
Variation:
Roll the balls in finely grated nuts or coconut.
I add grated ginger instead of the orange or lemon rind. I would like to
