Candy: Cinnamon Matza Brittle - pareve

I experimented with this last year, and the results were
spectacular.  Try it and see!

Cinnamon Matza Brittle

2 cups matza farfel
1/2 to 1 cup sugar 
1 tbsp cinnamon

This works best on a dry, sunny day.

Cover a large cookie sheet with foil.

In a large, *very* nonstick skillet, stir in the sugar and
cinnamon.  Start with a half a cup, and add more if you think
you'd like more.  

When the sugar is melted, add the matza farfel.  Stir to coat.
Stir enough that the matza farfel is hot, and the sugar is
everywhere.  Transfer quickly to the cookie sheet, and spread
thin.  Allow to cool, then break into chunks.

Store when cool in a tightly sealed container.
