Candy: Almond Candy - pareve

Almond Candy
~~~~~~~~~~~~
      
      Yield: 15 Servings
 
      2 c  Sugar
    1/4 ts Ground ginger
      1 lb Honey
      2 c  Almonds; coarsely chopped
      1 c  Water
      4 c  Matzo farfel
           Pinch of salt
    1/2 ts Cinnamon
 
1.  Cook sugar, honey, and water in large saucepan over low heat. Stir constantly for 5 
    minutes to blend.
  
2.  Continue cooking without stirring for a while until hard
    ball stage. (Test by dropping a little on a wet surface.
    If it hardens and holds together, you are ready.)
  
3.  Remove from heat and add all ingredients.
  
4.  Pour onto well greased cookie sheets. Cool and cut into 
    diamonds or squares.
