Cake: Nut - pareve

Source: Supermarket in Ayalon shopping center in Ramat Gan

4 eggs
1 cup sugar
2 tablespoons matzoh meal
2 tablespoons potato starch
1 cup ground nuts (I used pecans and almonds)
2 tablespoons oil
4 tablespoons brandy
Juice of 1 lemon
100 g. bittersweet chocolate, chopped

Separate the eggs. Beat the egg whites with the sugar
until stiff. To the egg yolks, add the oil, brandy,
and lemon juice, and mix well. In a separate bowl,
mix together the matzoh meal, potato starch, nuts,
and chocolate. Fold the yolk mixture and matzoh meal
mixture into the egg whites.

Put into loaf pan, and bake at 150C for about 25
minutes.

Nutritional information for serving size 1/15 of recipe:
176 calories, 10 g. fat (2 g. saturated fat),
3 g. protein, 19 g. carbohydrate, 1 g. fiber,
57 mg. cholesterol, 18 mg. sodium

Note: I doubled this recipe, and it was enough to
fill 3 smallish loaf pans.
Note 2: When I tasted this cake right after baking it, it 
didn't seem very flavorful, but the next day, it tasted 
very good.
I guess the brandy needed to seep through!
