Cake: Matzah Layer w/Chocolate Frosting - dairy

Posted by : Ellen S.

Don't know where this recipe came from, I found it in my files clipped
from some publication I can't remember.  I made it and liked it;
guests did too. And it's easy.

MATZOH LAYER CAKE

Warmed milk (enough to soak matzohs one at a time)
8 to 10 sheets matzoh
frosting (recipe follows)

Warm milk in a large frying pan; put in matzohs one at a time. The
matzohs should be soaked, but not falling apart. Put the first matzoh
in the serving dish, cover with frosting, add second matzoh, cover
with filling, and continue until you've reached a desired height.
Cover the cake with all remaining frosting; it should be completely
covered. Chill 4 to 5 hours (overnight is better). Cut with sharp
knife.

CHOCOLATE FROSTING
1/4 cup butter, soft
8 ozs. cream cheese, soft
5 ozs. unsweetened chocolate, melted
salt, pinch
3 cups confectioners sugar, sifted
3 Tablespoons butter
3 teaspoons vanilla extract
Cream butter and cream cheese together. Add chocolate, salt,
confectioners' sugar and vanilla. Mix well.
