Cake: Chocolate Flourless Torte - dairy, pareve

This is also easy and spectacular

Chocolate flourless torte

1 lb semi sweet baking bar or chips chocolate- choose a good brand
2 sticks butter or margarine 
10 large eggs room temperature- separated
1 1/2 cups granulated sugar
dash salt

1 10 inch springform pan with removable sides
Oven 425 F
Use center oven rack to bake

In double boiler melt chocolate and butter over low simmering heat.
Stir  to make smooth and set aside.
Meanwhile beat yolks with sugar in an electric mixer bowl for 10
minutes at high speed until almost a marshmallow consistency. Mixture
will fall off from beaters in  "ribbon strands".
In another bowl with clean beaters whip whites until soft but moist
peaks.
Stir chocolate mixture into yolk mixture and blend smooth.
Gently fold in 1/4 of the whites and blend well. Then add the
remainder of the whites and blend well but gently with wire whisk.
Pour mixture into the well greased pan. Smooth top of batter. it will
fill 3/4 full.
Bake in a preheated 425 F oven about 35 to 45 minutes or until center
appears set. Cake will puff up way above pan and with cooling will
deflate to original level. There may be a slightly sunken middle.
This is normal for this cake.
Cool completely on rack  Carefully remove sides and chill cake
overnight. Cake also freezes well.
You can spread whipped cream or  place fruit over the center ( such as
raspberries or strawberries )  or add a chocolate ganache glaze.
This is a delicious, chocolate, fudgy cake plain or embellished.
It is very rich and cut small slices.
