Cake: Chocolate-Wine Sponge - pareve

This is a favorite of my chocolate loving family.  Malka Withnell

CHOCOLATE-WINE SPONGE CAKE

Serves 10	
  		
DO NOT DOUBLE THIS RECIPE!!!

8 eggs, separated	  
1 1/2 C. sugar	  
3/4 C. cake meal	  
2 Tbsp. Cocoa Powder
1 Tbsp. potatoe starch
1/4 c. orange juice
1/4 c. red wine or grape juice

1.  Preheat oven to 325o F
2.  Beat egg whites until stiff.
3.  In another, lg. bowl, beat egg yolks with sugar until thick and
    creamy.
4.  Sift together remaining dry ingredients.  Stir into yolks.
5.  Add juice and wine and mix well.
6.  Fold in egg whites.
7.  Pour into 9" or 10", shallow tube pan.
8.  Bake 50 minutes.

COMMENTS:  (1984) Moist, very good.
           (1991) DO NOT DOUBLE THIS RECIPE!!!!!!!!! If you need two
           cakes mix up separately
           Also, don't try adding the sugar to the egg whites.  I
           tried both these ideas and ended up with very tasty crumbs.
