Cake: Apple - pareve

Source: An Israeli cookbook, "Bishula," by Shula Modan. 

Filling:
5 Granny Smith apples, peeled, cored and sliced
Juice of 1 lemon
1/2 c. sugar
2 t. cinnamon
1/2 c. raisins

Cake batter:
5 eggs
3/4 c. oil
1 c. potato starch
1/2 c. matza meal
3/4 c. sugar
Dash salt

Topping:
1/2 c. chopped nuts
1 t. cinnamon
1/4 c. sugar

Mix all the ingredients for filling, batter and topping 
(separately).
Pour 1/2 the batter into greased pan.
Spread apple filling evenly over the batter.
Pour remaining batter over apples.
Top with nut mixture.

Bake in preheated oven (350F) for 45 minutes.
