Pasta with Honey, Raisins and Nuts, Turkish - dairy

This Turkish recipe is over 1000 years old, and is still served 
in parts of the Middle East. It can be served hot or cold. 

It is traditionally intended to be as sweet as possible.

INGREDIENTS

1 pound fideos (or angel hair pasta)
1 tsp. cinnamon
3/4 cup blanched almonds
1/2 cup golden raisins
4 tbsp. butter
1 1/2 cups honey
2 tsp. lemon juice

DIRECTIONS

Cook the noodles in a pot of boiling water until al dente. 
While the noodles are cooking, toast the almonds on a baking 
sheet in the oven at 350F for 10 minutes. Mix together, in a 
large bowl, honey, lemon juice, cinnamon, nutmeg, raisins, 
and almonds. When the noodles are done, drain them well and 
immediately toss with the butter. Place the noodles in a
buttered 2-1/2 Qt. casserole and pour the honey mixture over 
them; toss well. 

Bake at 350F for 20 minutes.
