American Jews use this product for meal named "Varnychkes". My parents made
home made varnechkes rolling dough to thin sheet (1 mm) and cut to squares
2x2 cm. But Bowtie is excellent too. So:
Yiddishe Varnychkes
2 cup Buckweat
1 large Onion
(Optional 1 cup sliced mushrooms)
2 tbsp. butter
1 lb Bowtie
salt & pepper
Place buckweat to empty pot and burn it a little, Add 3 cup of water, salt
and cook low heat until water evaporise.
Meanwile chopped onion fry with butter, when onion is golden add mushrooms
and cook about 15 min.
As lomg as buckweat is cooked and no water on the bottom add fried onion
with mushrooms. Add pepper to taste.
Note: The best quality of buckweat are Lithuanian, Polish or Russian dark
kinds of buckweat. Don't buy cracked one.
